The Ultimate Salad Book by Chantal Lascaris is published by Struik Lifestyle.

The author of the All Sorts of series – Salads, Healthy Dishes, One-Dish Wonders and Tapas – lives on a farm in Franschhoek and loves her veggie and herb garden. She believes that it’s time for the salad to take centre stage. “There’s so much more to salad than a handful of lettuce leaves and a few tomatoes. What it all boils down to is simple, nourishing and delicious meals with plenty of nutrient-dense ingredients. All those good and healthy things, like leafy green vegetables, whole grains, seafood, poultry, beans, nuts and fruit. With this assortment of superb salads, you’ll be eating them for breakfast, lunch, dinner and even dessert” (6).

The Ultimate Salad Book consists of 176 pages and eight chapters titled: Classic Salads, 3-Ingedient Salads, Vegetarian Salads, Fish & Seafood Salads, Poultry Salads, Meat Salads, Fruity Salads and Dressings. All recipes serve four guests. This assortment of superb salads will delight any foodie, especially those of us desiring to follow a healthier lifestyle. From side salads to main courses, these creative and versatile recipes will bring flavour, colour and nutrients to your plate. “There’s a recipe for every season and every occasion. Some are savoury and some are sweet. There are salads that are light and elegant, perfect for summer lunches with a glass or two of chilled white wine, or that are rich and hearty enough to pair with a red wine on a chilly evening” (7).
