Impossible pie serves 8 prep + cook 50 mins.
1/2 cup White Wings Plain Flour
1 cup CSR Coconut Sugar
3/4 cup desiccated coconut
1 tsp vanilla extract
125g butter, melted
1/2 cup flaked almonds
2 cups milk
fresh passionfruit, blackberries and blueberries, to serve
1. Preheat oven to 180°C. Grease a 24cm pie dish.
2. Combine sifted plain flour, sugar, coconut, eggs, vanilla, butter and half the almonds in a large bowl. Gradually add milk, stirring, until combined. Pour mixture into dish.
3. Bake impossible pie 30 mins. Remove from oven, sprinkle with remaining almonds and bake a further 15 mins or until pie has browned lightly and set.
4. Serve impossible pie topped with fresh passionfruit pulp, blackberries and blueberries.
